Ricotta cookies

• 1 stick (114g) butter
• 1 cup (200g) granulated sugar
• 1.5 eggs
• 1/2 tsp vanilla extract
• 1/2 lb (225g) ricotta (preferrably homemade)
• 2 cups (240g) all-purpose flour
• 1/2 tsp salt
• 1/2 tsp baking soda

Vanilla glaze

• 1 cup powdered sugar, sifted
• 1/2 tsp vanilla extract
• 1 Tbsp butter, melted
• 1-2 Tbsp whole milk

Ricotta cookies

Cream butter and sugar well. Add eggs and beat. Add vanilla and beat. Add ricotta and beat. Separately, mix togethre flour, baking soda, and salt. Add to wet and blend well. Using #60 scoop, spacing ___ apart on cookie sheet Bake at 350F for 10-15 minutes, until bottom edges are golden brown.
